Monday Funday #3

MondayAs much as I love books, I am obsessed with so many other things. I love music, movies, fashion, pop culture, painting, art, etc. So once a week, I am going to take a break from books and share some random fun things in honor of Monday Funday! Take a look at a few of my favorite things and leave a comment to tell us what you love! Without further ado, I give you something random and awesome!

Now from the music corner, we have an fabulous EP from the Cathedrals. A friend sent the EP to me through Spotify and I love it! The lyrics and melodies are fabulous. The harmony is sometimes haunting and always beautiful. And I love the cover art. It is beautiful. Take a listen and let me know what you think!

Now for something a little different. Fall is approaching here in Oklahoma (finally) and I couldn’t be happier. I love scarves, boots and the changing of the season! A bonus is that it is like a whole new genre of food comes out to fill our tummies. Who can complain?! We have Pumpkin Spiced everything and the scents of the season are fabulous! Keeping that in mind, I am going to share a recipe that was given to me several years ago. This delicious dish makes me think of fall with it’s ingredients but I make it year round, cause it’s just that great! It is called Hare’s Haversack Crumble (an adaption of a recipe by Brian Jacques). In my house, we affectionately call it Crumble Crack, cause one bite will never be enough! You will be amazed….

Crumble Crack

aka Hare’s Haversack Crumble (adapted from the Redwall series by Brian Jacques)

Inside Mixings:

5-6 apples (pealed, cut in 1″ chunks, sprinkled and stirred with ample ground cinnamon)
1-2 cups of fresh or frozen blueberries (preferably thawed)
1-2 cups of fresh or frozen peaches or cherries (or any other appropriate fruit- It tastes fabulous with season fruits! I love to mix it up!)
Stir all fruit up together so it is balanced between fruits and the cinnamon is spread throughout!

Crumble Topping:

2      1/4 cup of flour
2     1/4 cup of brown sugar
2    1/4 cup of oatmeal
1/2 teaspoon of salt
1 cup of butter melted and mixed in with solid ingredients with a fork
1- 1/2 cup of pecans or walnuts (optional)

Bake at 350 degrees for 30-40 minutes. I always find it a good idea to cook in baking dish on top of a baking sheet, in case the fruit bubbles over in all its sticky deliciousness! It tastes fabulous alone on it’s own or with a cold scoop of Vanilla Bean ice cream. Either way you can’t go wrong!
