As much as I love books, I am obsessed with so many other things. I love music, movies, fashion, pop culture, painting, art, etc. So once a week, I am going to take a break from books and share some random fun things in honor of Monday Funday! Take a look at a few of my favorite things and leave a comment to tell us what you love! Without further ado, I give you something random and awesome!
Ah! It is fall and that alone brings a smile to my face! It brings new scents, new music, new clothing choices and new recipes! I love the changing of the seasons! We don’t have much of a fall here in Oklahoma, but this year it looks like we might have more of a fall than I have seen in a while! So let the celebrating begin!
On the music side of things, I have been listening to You+Me on repeat for what feels like years. The smooth soulful lyrics and sound is incredible. I started listening to it not knowing anything and then I kept thinking to myself ” I know that voice..” Lo and behold, I did. The one and only P!NK is the female lead vocals in this duo. She brings a raspy, rich tone to the songs, a perfect combination with the Canadian singer/songwriter Dallas Green. It has a nice folksy Civil Wars feel. Perfect for a soothing playlist for any day! Check it out!
Here is another recipe that I love to make, especially when the temperature starts to drop. It is delicious and easy to cater to what you would prefer. You can add so much more to the recipe. This is the Tina Version of the recipe! Enjoy!
Tomato Spinach Tortellini Stew
Prep Time: 10 min
Cook Time: 20 min
Level: Easy
Serves: 6-8 servings
Ingredients
>>1 tablespoon olive oil
>>1/2 cup minced onion (about 1/2 small onion)
>>1 clove garlic, minced
>>6 cups broth, chicken or vegetable
>>1 (14-ounce) can whole tomatoes
>>1 (9-ounce) package fresh tortellini or 4 servings dried tortellini
>>Coarse grained salt and cracked black pepper
>>10 ounces fresh spinach, chopped
>>1/4 cup freshly grated Parmesan
>>1 lb. ground turkey (cooked)
>>1 large zucchini
Directions
In a 3-quart soup pot, heat olive oil over medium high heat.
Cook the ground turkey in a skillet until fully cooked. Leave for later!
Saute the onion and garlic, stirring often until onions are translucent, about 5 to 7 minutes.
Take the tomatoes and crush them in your hands or chop them into coarse pieces.
Add broth and tomatoes, turn heat up to high, and bring to a boil.
Add the tortellini and cook according to package instructions.
Chop the spinach and zucchini into small pieces and set to the side.
When tortellini is almost done, add the chopped spinach, zucchini and ground turkey.
Taste test the stew and adjusting seasonings with salt and pepper as you need.
Serve immediately. (You can garnish each serving with a sprinkling of Parmesan. Yum!)
